Back from our American Vacation

We just returned to Spain after 35 days in America. It was an adventure-filled, non-stop eating and drinking, whirlwind of a vacation that we soon won't forget. But now we are back to reality and ready to start some hard core diets and catch up on hours and hours of sleep.
I'll start the stories with our first three days in Seattle or more specifically Kirkland with my dad and Jeanne. The eating and drinking started off the trip and didn't stop for the next 35 days!

We arrived to Seattle around 11:30 am on a Wednesday and my dad picked us up at the airport and we headed home and then out to lunch. We did pretty good with jet lag and ended up staying up until about 9 pm.
We decided that for Dad and Jeanne we would cook a typical spanish dish for them- Salt fish. This is a whole fish covered in rock salt and then baked in the over for about an hour. Then you take it out and break off the salt and serve. The salt hardens and that way the fish can steam inside and it comes out nice and moist and not too salty.
Well it turned out to be an adventure finding a whole fish that wasn't cut down the middle. We didn't want it cut down the middle so all the juices would stay inside while cooking and stay moist. Apparently in Spain the fish can be gutted through the throat and that way you can keep everything in tact but this isn't he case in America. After looking at a variety of supermarkets we finally went to Uwajimaya and found a whole fish, not gutted. We have no idea about fish so we didn't really know what we were buying but it turned out pretty good.
Pablo was the chef and this is his creation
Rock Fish
On a bed of salt before they are covered
Out of the oven and salt removed
Dad took Pablo for a bike ride
We tried dumplings at the famous Din Tai Fung
Then we hit up the Kirkland Uncorked event on the waterfront. It would have been so nice if it was sunny but of course it was pouring rain. But we caught some brief breaks and had a good time. I think the best part was the food though!
